Strawberry & Chocolate Sheet Pie

It was only until recently I heard of recipe titles that said, "sheet" this or "slab" that.  The idea is simple cooking or baking, using only one cooking sheet.  While we were visiting family in Missouri,  our Aunty Vicky brought over this delicious chocolate sheet cake  that was out-of-this-world good.  After doing some research online, I found many wonderful dinners and desserts that involved using only one cookie pan.   I stumbled upon this dessert, and knew I had to try it out for Valentine's Day.  ( I did make a couple edits for my own liking)

I enjoy cooking, but when it comes to baking, I try to take as many short cuts as I possibly can.  Don't get me wrong, occasionally I will hand make pie crust or bake a cake from scratch... but who am I to ignore Miss Sally Hansen, or Mr Duncan Hines??  Sometimes, when I can take a few short cuts, I enjoy baking a whole lot more.

Below is the list of ingredients for your average size cookie sheet:
(I used 2 mini cookie sheets, but it took the same amount as one large cookie sheet)

2 pounds of ripe strawberries
1-2 cups of dark chocolate morsels (depending on how much chocolate you want)
2 packages of pre-made pie crusts
1/2 cup of sugar
1 tablespoon corn starch
2-3 tablespoons of milk or heavy cream (for brushing the crust)
1-2 tablespoons granulated sugar (for top of crust if desired)

Steps:
  • Preheat over to 400 degrees
  • Wash, remove stems and cut strawberries into quarters
  • Combine sugar and cornstarch in a separate bowl
  • Slowly add sugar mixture into bowl of cut strawberries, fold in, and set aside after
  • Line bottom of cookie sheet with Pastry
  • Evenly sprinkle chocolate chips and strawberry mixture

  • Spread out pastry top layer, and cut out your design using cookie cutters. I used 1 1/2 packaged pastry sheets for the top and bottom.

  • Place party on top and pinch the ends together
  • Glaze the top with milk
  • Put in over for 35-40min, let cool
